My Favorite Easter Dinner Menu

Celebrate Easter with my favorite southern and delicious Easter menu straight from Plains Cottage here in good 'ole Plains, Georgia.

Well let's get to the eating part of Easter...


A good Easter dinner starts with a gorgeous table setting -- like this one from Royal Albert New Country Roses pink china set is nothing short of beautiful.



Next you need a good Easter indoor/outdoor tablecloth.




After your table is gorgeously set, it's time to cook! Whether it's a formal or casual Easter gathering around the table, this menu is sure to please all of your guests.




GLAZED HAM WITH PINEAPPLE AND CHERRIES


Ingredients:

  • 1 bone-in ham

  • 1/2 cup whole cloves

  • 1 (20 ounce) can pineapple rings in heavy syrup

  • 1/2 cup packed brown sugar

  • 1 can of lemon lime soda

  • 1 jar chopped maraschino cherries


Directions:

1. Preheat oven to 325 degrees F.

2. Place ham in roasting pan. Score the rind of the ham with pineapple, cherries and clove.

3. Coat ham with soda and sugar.

4. Bake uncovered 4-5 hours.


Scalloped Potatoes

Ingredients

  • 3 cups heavy whipping cream

  • 3 tablespoons all-purpose flour

  • 3 1/2 pounds unpeeled Yukon Gold potatoes, very thinly sliced (about 1/8-in.-thick)

  • 2 teaspoons kosher salt

  • 1 teaspoon black pepper

  • 2 (8-oz.) packages sliced cheddar cheese


Directions

  1. Preheat your oven to 375°F. Coat a 13- x 9-inch baking dish with cooking spray. Whisk together heavy cream and flour; set aside

  2. Arrange 2 even layers of potato slices in prepared dish; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Top with one-third of the cheese slices (6 to 8 slices), overlapping to fit

  3. Pour about 1/2 cup of the cream mixture over the layers. Repeat process 2 more times with remaining ingredients

  4. Bake in preheated oven 1 hour. If potatoes begin to brown too much, loosely cover dish with aluminum foil, venting to allow steam to escape. Bake an additional 30 minutes, partially covered, until potatoes are very tender and top of casserole is golden brown. Let stand 15 minutes before serving.




Honey Butter Glazed Carrots


Ingredients

  • 1 1/2 lbs Carrots

  • 1 tbsp Rosemary, fresh

  • 3 tbsp Honey

  • 1 Black pepper

  • 1/4 tsp Kosher salt

  • 4 tbsp Butter

Preheat oven to 425°F and bake on baking sheet for 25 minutes or until desired tenderness.





Georgia Peach Iced Tea


Ingredients


1 gallon filtered water

3 black tea bags

1 fresh peach, pureed

1 cup sugar


Directions


Bring water to boil with tea bags. Puree a fresh peach, depitted and peeled. Add sugar and peach to tea. Serve chilled or over ice.
